Fresh Halibut fillets seasoned with lemon-pepper and pesto are paired with a Northern bean and tomato mixture.
SERVES: 4
PREP TIME: 10 Minutes
COOK TIME: 20 Minutes
Ingredients

4 sheets (12x18 inches each) Reynolds Wrap Everyday Aluminum Foil
2 15 oz. cans Great Northern beans, rinsed and drained
2 medium tomatoes, chopped
1/4 cup prepared pesto, divided
4 Alaskan Halibut Fillets (4 to 6 oz. Each), thawed if necessary
4 tsp. lemon juice
2 tsp. Lemon-pepper seasoning
4 lemon slices

Directions
Step 1  Step 1:
Preheat oven to 450 degrees F or grill to medium-high.
 
Step 2  Step 2:
Combine beans, tomatoes, and 2 tbsp. pesto in medium bowl; mix well.
 
Step 3  Step 3:
Center 1/4 bean mixture on each sheet of Reynolds Wrap Everyday Heavy Duty Aluminum Foil. Top with Halibut fillets; drizzle with lemon juice. Spread halibut with remaining pesto; sprinkle with lemon-pepper. Top with lemon slices.
 
Step 4  Step 4:
Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
 
Step 5  Step 5:
Bake 16 to 20 minutes on a cookie sheet in oven or grill 14 to 18 minutes in covered grill.
 
Step 6  Step 6:
Serve fish with a slice of warm French bread.
